Chef Dimitris Paliouras, the creative force behind Valaora, after having worked in various high-end restaurants around Greece, returned to the place he was raised, to redefine the dining experience in Nafplio. Having represented Greece in international gastronomic competitions, Chef Paliouras draws inspiration from his roots, Valaora village and the vast culinary tradition of the Greek countryside. Equipped with the best seasonal ingredients from the sea and the soil that surround us, he presents his fresh, creative approach to Greek gastronomy.
